FRANCESCO I Franciacorta Brut

Area of production: The Franciacorta hills, precisely in Erbusco, Adro, Cazzago S. M. (Calino), Cologne in the pieces of ground belonging to the Uberti Farm

Grapes used: Chardonnay, White Pinot, Black Pinot.

PRODUCTION PROCESS: the must obtained from a light pressing of the grapes, picked up by hand and selected, ferments in stainless steel containers and it stays standing until the placing in bottle, where the refermentation of the wine occurs.

Only after a long contact with the yeasts (36 months), the bottles are subjected to the operation of remuage and degorgement.

After 6 months from degorgement they are commercialized.

 

ORGANOLEPTIC CHARACTERISTICS

Pale yellow colour, abundant froth; fine and persistent perlage; intense scent of crust of bread; pleasant taste, slightly acidulous, persistent in mouth.

Alcoholic content: 13%.

Total acidity: 6,50

 

Serve it at a temperature not over 10°C, taking care of putting the bottle into the ice-bucket, so that the temperature could fall to 6°-7°C.

It is a good accompaniment to all courses.

FRANCESCO I Franciacorta Extra Brut

Area of production: The Franciacorta hills precisely in Erbusco, Adro, Cazzago S.M. (Calino), Cologne in the pieces of ground belonging to the Uberti Farm

Grapes used: Chardonnay, White Pinot, Black Pinot.

PRODUCTION PROCESS: the must obtained from a light pressing of the grapes, picked up by hand and selected, ferments in stainless steel containers and it stays standing until the placing in bottle, where the refermentation of the wine occurs.

A different addition of liqueur makes it drier than the Brut type.

FRANCESCO I Franciacorta Rosé Brut

Area of production: The Franciacorta hills, precisely in Erbusco, Adro, Cazzago S.M. (Calino), Cologne in the pieces of ground belonging to the Uberti Farm

Grapes used: Chardonnay, Black Pinot

PRODUCTION PROCESS: the grapes are harvested in different times, the vinification is different: part of the black pinot must is left on the peels for some days for getting coloured; the cuvée between chardonnay and black pinot occurs before being bottled for becoming sparkling. Only after a long period (at least 36 months) in touch with its yeasts the bottles are disgorged and commercialized after 6 months from the degorgement.

 

ORGANOLEPTIC CHARACTERISTICS

Sweet pink colour with orange reflections; abundant froth; fine and persistent perlage; fresh and fruity scent; intense and lively taste of yeast.

Alcoholic content: 13%.

Total acidity: 6,50

 

Serve it at a temperature not over 10°C, taking care of putting the bottle into the ice-bucket, so that the temperature could fall to 6°-7°C.

It is a good accompaniment to all courses.

Franciacorta Rosé Brut Francesco I

MAGNIFICENTIA Franciacorta Brut Satèn Millesimato

Area of production: The Franciacorta hills, precisely in Erbusco, in the pieces of ground belonging to the Uberti Farm

Grapes used: 100% Chardonnay

PRODUCTION PROCESS: After the grape harvest of the bunches, strictly selected , follows a light pressing. The fermentation of the must occurs partly in natural oak conical containers (32 Hl. Rats) and partly in stainless steel. It matures at least 36 months on its yeasts in the bottle.


ORGANOLEPTIC CHARACTERISTICS

Pale yellow colour; very fine and persistent perlage; persuasive taste and perfumes of special refinement, free from effects but extremely pleasant.

Alcoholic content: 13%.

Total acidity: 6,5

 Serve it at a temperature not over 8°-10°C, taking care of putting the bottle into the ice-bucket.

Suitable as aperitif, it is a good accompaniment above all to fish courses.

On the label is represented the Magnificentia of the Sun, the natural element very important and essential for the growth of the vine and crucial for the ripening of the grapes. The sun warms the earth during the day.

 

Franciacorta Brut Satèn Magnificentia

COMARI' DEL SALEM Franciacorta Extra Brut Millesimato

Area of production: The Franciacorta hills, precisely in Erbusco, in the piece of ground named "COMARI' DEL SALEM" belonging to the Uberti Farm

Grapes used: Chardonnay, White Pinot.

PRODUCTION PROCESS: grape harvest of the bunches with a strictly selection, after a light pressing the must ferments partly in stainless steel containers and partly in oak barrels. It is normally put on the market at least 48 - 60 months after its becoming sparkling, so that it can better refine as time goes on.

It is suggested in the "Extra Brut" type and it is commercialized after 6 months from disgorgement.

 

ORGANOLEPTIC CHARACTERISTICS

Definitely yellow colour, still with greenish tints; abundant froth; very fine and persistent perlage; intense scent, complex, slightly reminding of wood; definitely long and wide taste, it reveals the long contact with the yeasts residues.

Alcoholic content: 13,50%.

Total acidity: 7

 

Serve it at a very low temperature (6°-7°C), if possible in large glasses with high stem. It is a "hard to forget" wine and a good accompaniment to the whole meal. No other wines are admitted!

Comarì is the name of the historic vineyard of the company. The land was purchased by the Uberti family from Comarì, son of the Comare (midwife of the village). Salem, instead, is the name that appears on the cadastral map on this plot and it derives from the Aramaic "Land of Peace". We wanted to emphasize the importance of the earth and of this vineyard by portraying it, on the label, in the shape of globe embraced by Gea - Mother Earth, who was the midwife of many Gods in the ancient times.

Franciacorta Extra Brut Comarì del Salem 2006

SUBLIMIS Franciacorta Not Measured Out Millesimato Reserve

Area of production: The Franciacorta hills, precisely in Cazzago S.M. (Calino) in the pieces of ground belonging to the Uberti Farm

Grapes used: 100% Chardonnay

PRODUCTION PROCESS: After the hand-harvesting of the bunches, strictly selected follows a light pressing. The fermentation of the must totally occurs in natural oak containers (Hl. 32 rats), free from transfers of spicy notes and toasting. Only after a long period (60 - 72 months) in touch with its yeasts, it is suggested in the only type "Not measured out" and commercialized after 6 months from the disgorgement.

 

ORGANOLEPTIC CHARACTERISTICS

Pale yellow colour, still with greenish tints; abundant and creamy froth; fine and persistent perlage; intense scent, the effluviums tracing to wood are almost imperceptible; it shows pleasant evolutionary notes to the taste, the particular softness and roundness is surprising and it is certainly not due to the presence of sugars.

Alcoholic content: 13,50%.

Total acidity: 6

 

Serve it at a constant temperature of 8°-10°C, in glasses of discreet dimensions and with long stem. It is a kind of conceited wine, maybe unique in its sort, it would always like to create pleasant sensations.

On the label is represented the starry sky, another important factor for the growth of the vine. The heat exchange, determinate by the coolness of the night, is very crucial for a good result in the maturation of the grapes.

Franciacorta Non Dosato Sublimis 2004

QUINQUE Franciacorta Extra Brut

Area of production: Franciacorta hills in the towns of Erbusco, Adro, Cazzago S.M. (Calino) in the vineyards owned by the Company Uberti

Grapes used: 100% Chardonnay

Five vintages from different plots. Very thin stony, dry, well-lit and always ventilated hilly lands.

 

The first edition is obtained from the assembly of 5 vintages: 2002 (fresh), 2003 (extremely hot), 2004 (generous), 2005 (difficult) and 2006 (very dry).

  

PRODUCTION PROCESS: After the manual harvesting of the grapes, with a rigorous selection process, follows a light pressing. The fermentation of each individual harvest takes place entirely in natural oak containers (vats of 32 Hl.), free from the release of spicy notes and roasting. The single harvest is left alone on its lees for approximately six months. After this period it is transferred into another vat that contains the assembly of the 5 vintages. Bottled in spring and only after a long period of over 66 months in contact with its lees, it is proposed in the Extra Brut typology.

 

In the first edition of QUINQUE we obtained only 2.540 1,50 lt. Magnum numbered.

Taste: definitely long and wide, soft and round
